Desserts - Chocolate Covered Strawberries
This is the simplest version of chocolate covered strawberries I know. Paraffin was originally used instead of shortening. Turn the strawberries upside down and insert by the toothpicks into a piece of styrofoam for easy cooling, or simply place them on a sheet of wax paper. White chocolate may be drizzled over the milk chocolate for a fancier look. They are perfect for weddings when decorated with frosting bow ties, bells, butterflies, roses, etc.

Seafood - Panko Breaded Fried Razor Clams
Pan-fried razor clams in a crunchy crust make a tasty shellfish appetizer when breaded with coarse Japanese panko bread crumbs. Allow enough additional time before cooking to freeze breaded clams so the coating sticks well.

Side Dish - Beets And Greens
Roasted beet pieces nestled among their sauteed greens makes a beautiful, delicious side dish. If yellow beets are available, double the recipe using a bunch of red and a bunch of yellow, they're gorgeous! I think these go especially well with pork or chicken. This recipe can easily be doubled, tripled, or expanded to whatever amount you need without adding very much to the preparation time.
